There is nothing like Springtime and Summer when fresh berries are every where. We love to go strawberry and blue berry picking. Sometimes i end up with a ton of berries. This is the perfect way to use up some berries pretty fast. This recipe is very versatile. I have made it without blackberries before just because we did not have any and it turned out perfect. As long as you have strawberries, i believe you could just use what you have mixing and matching with the other berries. It is a great recipe for company because it can be ready in just a few minutes and chill while you are eating dinner. The Pie should be eaten within a couple of days to prevent the crust from getting soggy.

Ingredient:

1 pound strawberries, hulled and halved or quartered if they are large.

1 cup raspberries

1 cup blackberries

1 cup blueberries

1 1/4 cup water

1/2 cup sugar

2 tbsp cornstarch

1 prepared shortbread crust.

  1. Wash all berries and cut large berries in half or quartered if they are large. Place together in a large bowl and stir to combine.
  2. Bring 3/4 cup of berries to a boil with a cup of water. Turn heat down to medium.
  3. Stir cornstarch and water together and pour into hot berries.
  4. Stir 2-3 minutes until mixture thickens.
  5. Remove from stove and let mixture thicken.
  6. Stir in with fresh berries and then put mixture into graham cracker crust and Chill for one hour.

Serve with Whip Cream.
