There is nothing like Springtime and Summer when fresh berries are every where. We love to go strawberry and blue berry picking. Sometimes i end up with a ton of berries. This is the perfect way to use up some berries pretty fast. This recipe is very versatile. I have made it without blackberries before just because we did not have any and it turned out perfect. As long as you have strawberries, i believe you could just use what you have mixing and matching with the other berries. It is a great recipe for company because it can be ready in just a few minutes and chill while you are eating dinner. The Pie should be eaten within a couple of days to prevent the crust from getting soggy.
Ingredient:
1 pound strawberries, hulled and halved or quartered if they are large.
1 cup raspberries
1 cup blackberries
1 cup blueberries
1 1/4 cup water
1/2 cup sugar
2 tbsp cornstarch
1 prepared shortbread crust.
- Wash all berries and cut large berries in half or quartered if they are large. Place together in a large bowl and stir to combine.
- Bring 3/4 cup of berries to a boil with a cup of water. Turn heat down to medium.
- Stir cornstarch and water together and pour into hot berries.
- Stir 2-3 minutes until mixture thickens.
- Remove from stove and let mixture thicken.
- Stir in with fresh berries and then put mixture into graham cracker crust and Chill for one hour.
Serve with Whip Cream.
