This healthy soup is super quick and easy to make.

Ingredients:

4 tbsp olive oil

½ onion chopped

1 carrot grated

4 quarts water or chicken broth

4 medium potatoes into 1 inch cubes

2 cups dandelion greens chopped

2 tbsp dill chopped

Salt and pepper to taste

Instructions

Heat a Dutch Oven or large pot over Medium Heat.  Place 4 tablespoons of oil in the pan.

Saute carrots and onion approximately 8-10 minutes until soft. Season with Salt and Pepper.

Add water or chicken broth and bring to a boil. 

Chop potatoes into 1 inch cubes and place in boiling water.  Cook on Medium Low heat for approximately 15 minutes until potatoes are tender.

Add Dandelion Greens to soup along with dill and cook another 10 minutes. Add more salt and pepper to taste if needed.

Serve with a tablespoon or two of sour cream.
