Orzo, although it looks like white rice, it is actually a pasta and can be found in the pasta aisle. The Ronzoni Brand is usually always in stock at our local grocery store.

This dish is very creamy and tastes fantastic.  It is really simple and can be made during the week or for a gathering.

Ingredient.

2 Tablespoons Extra Virgin Olive Oil.

½-1 Onion, Chopped small. (My onions are always huge, so I like to use ½ of an onion)

1 ½ cups orzo   or whole wheat orzo

¼ cup wine or chicken broth

3 cups chicken broth

1/3 cup grated parmesan cheese

½ cup frozen green peas

¼ cup heavy cream

Squeezed Lemon

Salt and Pepper

Heat Olive oil in Dutch Oven over medium high heat. 

Saute Onion for approximately 2 minutes

Add orzo and toast for approximately 1-2 minutes, stirring to prevent burning.

Add ¼ cup wine or chicken broth and stir for approximately 1 minute or until absorbed into the Orzo.

Gradually add the rest of the chicken broth (3 cups) and continue stirring frequently.

Bring to a simmer and lower the heat to Low-Medium Low and cover.  

Cook for approximately 8-10 minutes until the Orzo is nice and tender.

Remove from heat and stir in the cheese, heavy cream, peas, and lemon juice.

Season with salt and pepper.
