This soup is definitely a comfort food. There is something about it that just feels fresh and clean. A friend of mine made me this soup years ago and I will never forget the clean and fulfilling taste of it.

After years of searching for a similar recipe, I decided to make my own and it sure did not disappoint. It is super easy to make.   Ginger, known for its anti- inflammatory properties is perfect for fighting colds, and halting the growth of bacteria. that combined with the Chicken Broth will surely get you or your family feeling back to normal in no time.

Ginger Soup with Chicken Balls

Ingredients:

1 tablespoon olive oil and 1 tablespoon unsalted butter

1 Onion / Divided

2 Cloves Garlic Minced  

2 Celery Chopped

2 Carrots Chopped

4 Ounces Ginger Root / Peeled and chopped

Ingredients for Chicken Balls

1 lb ground chicken

2 eggs

2 tablespoons bread crumbs

Salt and pepper

8 cups chicken broth

Directions:

Place 1 Tablespoon of Unsalted Butter and 1 Tablespoon Olive Oil in Dutch Oven over Medium Heat.

Chop half of the onion and saute in butter/oil mixture for approximately 5 minutes or until onion is translucent. Mix in Celery and Carrots and stir another 3-4 Minutes.  Mince Garlic and ginger into the pan and stir for one minute.   

Pour 8 cups chicken broth in the pan and bring to a boil.

Meanwhile Mix Ground chicken with 2 eggs, 1/2 onion grated , 2 tablespoons of bread crumbs and a pinch of salt and pepper.

Once water starts to boil.  Form meatballs from the chicken mixture. (I like to use a cookie scoop since the mixture is a bit moist) place into  boiling water.  Cover with a tight fitting lid.  Continue boiling over Medium Low-medium heat for 30-45 Minutes until chicken is done.

Serve
