My Italian Grandmother used to make the best pork chops, They were sauteed and then baked. They were always crispy and never hard to chew. I have tried more than my fair share of pork chop recipes trying to replicate her golden recipe. This recipe is about as close as i can get to the fabulous ones i used to eat as a child.
For these pork chops, i would recommend buying thin sliced bone in or boneless pork chops, If you have a thicker chop, you will want to pound them until they are really thin to cut down on the cooking time and make these work.
I also like to buy a big pork loin from Sams or Costco and then cut it into different meals. For Pork chops, i will take a loin out and cut some thin chops from it. It is best to not use a pre seasoned cut of meat, since this seasoning is really good.
Ingredients;
Pork Chops Thin Sliced or Pork Loin sliced thin, about 1/4 inch thick,.
2 tablespoons olive oil
1/3 cup flour
2 eggs
1/3 cup grated parmesan cheese
1/3 cup unflavored bread crumbs
1/3 cup panko crumbs
Salt and Pepper
Directions:
Set up a breading station. Place flour in the first bowl and season with Salt and Pepper, Place 2 eggs in the second bowl and give a good Stir. Place breadcrumbs, panko crumbs and parmesan cheese in the third bowl and mix well. Heat Olive Oil over Medium high heat in heavy bottom Pan. Dip Pork Chops in flour mixture, then eggs and then bread crumb mixture and place in pan. Cook on each side for approximately 3-4 minutes until brown and crispy. Drain on Paper Towels.
